Do you know what you are having for Easter Dinner? Easter is just a few days away tomorrow and I'm still trying to figure out what I'm making for dinner. It's part of my culinary geekiness. I spend way too much time reading and researching what to make, thumbing through dozens of books, surfing the web, before finally deciding on a menu and doing the shopping.
I'm still trying to decide between ham or lamb. Carrots, green beans and peas. And carrot cake, panna cotta and pavlovas for Easter dessert.
The one thing I'm sure to have is a few Cadbury mini eggs. I've had a bag in the pantry for weeks and I'm patiently waiting to open and enjoy them on Sunday. It's one of those fun foods I look forward to all year. And one of the things I love best about the Weight Watchers program - No food is off limits.
My mom's going to make and bring a roast turkey breast and stuffing, since she's not a huge fan of lamb. And I'm going to make a Weight Watcher's friendly Easter Dinner using some of these delicious recipes I've marked from around the Web. What I don't make tomorrow, I hope to try in future weeks or next Easter, since they all sound delicious.

Nigel Slater's Slow Roast Lamb (UK Guardian) - rubbed with an herb paste and slow roasted in the oven

Crock Pot Maple Ham (A Year of Slow Cooking) - Love the combination of ham & maple

UPDATE: It's now late Saturday afternoon and I've made the plan. We are going to have Slow Cooker Mint Glazed Lamb, Garlic Mashed Potatoes and Panna Cotta. I picked up some baklava and Lebanese cookie to go with it. And since my Mom was able to purchase cauliflower, broccoli, carrots and brussels sprouts for a bargain, we are going to roast a medley of them, instead of going with peas, carrots or asparagus. Now it's off to the grocery store for mint jelly and honey.
