I love easy no bake cookies for lots of reasons. They're quick and easy. They usually call for ingredients I have on hand: crisp rice cereal, granola, oats, marshmallows, nuts, coconut and/or chocolate chips.
And best of all, easy no bake cookies are portion controlled, so you can indulge your sweet tooth for a reasonable number of calories/Weight Watchers Points Plus.
I've gathered a few of my favorite easy no bake cookies recipes (with Points Plus values ranging from 2 to 4) here all in one place for easy reference. Four of them are for no bake cereal bars and the other one you roll into logs and slice.

Easy No Bake Cookies #1 - Rice Krispie Treats
With only three ingredients, rice krispie treats are the ultimate easy no bake cookies and a fun way to introduce your kids to cooking. Chances are they'll end up loving them forever, like my grandmother, who was still making them into her 90s. In addition to the basic recipe, I've included several great variations.
Rice Krispie Treats Easy No Bake Cookies
Ingredients
- 3 tablespoons butter
- 1 10 ounce package miniature marshmallows 4 cups
- 6 cups crispy rice cereal
Instructions
- Directions
- Line a 9X13-inch baking pan with parchment paper, waxed paper, or foil and coat with non-stick cooking spray then set aside.
- In a large saucepan, melt the butter over medium-low heat. Add the marshmallows and stir until the marshmallows are melted. Remove from the heat and then gently stir in the cereal and continue to stir until the cereal is coated with the marshmallow mixture.
- Spread the mixture into the prepared pan and flatten gently. (I’ve found the best way to do this is with clean slightly damp hands, but a rubber spatula (affiliate link) coated with cooking spray works pretty well too.
- Cool completely and and then cut into 12 bars.

Rice Krispie Treat Variations:
These easy no bake cookies can be modified and customized in lots of different ways. Here are some of my favorite ways to doll up these no bake cookie bars a bit:
- Use cocoa flavored crispy rice cereal in place of plain crispy rice cereal.
- Use brown crispy rice cereal and add ½ cup dried cranberries or raisins for healthy fruity crispy rice treats.
- Stir ¾ cup creamy peanut butter into the marshmallow/butter mixture before adding cereal to make delicious peanut butter rice krispie treats.
- Stir 2 tablespoons instant coffee into the marshmallow mixture before adding the cereal.
- Stir 1 ½ cups of small candies, such as mini chocolate chips, small gummy bears, or jelly bellies, when you stir in the cereal.
- Add 1 to 1 ½ cups crushed Oreo Cookies when you stir in the cereal.
- Drizzle cooled bars with melted milk chocolate or melted dark chocolate.
Easy No Bake Cookies #2 - Stained Glass Windows Recipe
These quick and easy no bake cookies showed up regularly on holiday cookie trays back when I was a kid. Mom clipped this easy chocolate no bake cookie recipe from the back of a bag of multi-colored mini marshmallows decades ago.
The recipe on the bag of marshmallows was simply called chocolate marshmallow logs, not nearly as descriptive as what we knew them as - stained glass windows. (When the logs are sliced, the mulit-colored marshmallows take on the mosaic appearance of stained glass.)
Stained Glass Window No Bake Cookies
Ingredients
- ¼ cup ½ stick butter or margarine
- 2 cups 12 ounces semi-sweet chocolate chips
- 1 cup chopped walnuts
- 1 bag 10.5 ounces colored mini marshmallows (about 5 cups)
- 2- ⅓ cups 7 ounces shredded sweetened coconut
Instructions
- In a medium-sized saucepan, melt the butter and chocolate chips over very low heat, stirring often, until the mixture is melted and smooth. Remove from the heat and let cool slightly.
- In a large-sized mixing bowl combine the nuts and marshmallows. Add the chocolate and stir until the marshmallows and nuts are well coated.
- Tear five 9-inch sheets of waxed paper and sprinkle each generously with the coconut.
- Divide the chocolate marshmallow mixture into fifths and place each fifth on a sheet of waxed paper. Roll each sheet of waxed paper tightly into 2-inch diameter log. Wrap tightly and refrigerate overnight or until firm.
- Before serving, unwrap from waxed paper and cut into ½" slices.

Easy No Bake Cookies # 3 - Chocolate No Bake Cookies Bars Recipe
Chocolate No Bake Cookies
Ingredients
- 3 ounces unsweetened chocolate coarsely chopped
- ¼ cup peanut butter
- 1 14 ounce can fat-free sweetened condensed milk
- 1 teaspoon vanilla
- 4 ½ cups low fat granola cereal
- 1 ⅓ cups sweetened coconut flakes
Instructions
- Lightly spray a 9x13-inch baking pan with nonstick cooking spray and then set it aside.
- In a large saucepan set over low heat, melt the chocolate, peanut butter, and condensed milk, stirring until well until the mixture is well combined and smooth. Remove the saucepan from the heat. Stir in the remaining ingredients until well coated.
- Dump mixture into the prepared pan and press into place. (I like to use clean moist hands for this.) Chill in the refrigerator 1 to 2 hours or until set.
- Cut into 30 bars. Store in a covered container between layers of wax paper.

Ingredients
- ½ cup butter
- 1 cup butterscotch chips
- 2 cups semisweet chocolate chips
- 1 cup creamy peanut butter
- 4 cups crisp rice cereal
- 3 cups miniature marshmallows
Instructions
- Lightly spray an 9x13-inch square baking pan with cooking spray and then set it aside.
- In a large saucepan over low heat melt the butter and both kinds of chips, stirring constantly until the mixture is melted and smooth. Add the peanut butter and stir again until well blended.
- Remove saucepan from the heat. Add the cereal and marshmallows and stir until everything is well mixed.
- Dump the mixture into the prepared pan and press into place with clean moist hands or a rubber spatula (affiliate link) coated with cooking spray. Cool completely and then cut into 36 bars. Store these easy no bake cookies in a covered container between layers of wax paper.

Easy No Bake Cookies # 5 - No Bake Chocolate Chip Oatmeal Cookie Bars
Chocolate Chip Oatmeal No Bake Cookies
Ingredients
- 2 ½ cups crisp rice cereal
- 2 cups quick cooking oats uncooked
- ½ cup firmly packed dark brown sugar
- ½ cup light corn syrup
- ½ cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Instructions
- Lightly spray an 8-inch square baking pan with cooking spray and then set it side. Combine the cereal and oats in a large bowl and set it aside as well.
- In a small saucepan over medium-high heat bring the brown sugar and corn syrup to a boil, stirring constantly. Remove from heat and stir in the peanut butter and vanilla until well blended.
- Pour the mixture over the cereal mixture and stir until it's well coated. Let the mixture rest for 2 minutes and then stir in the chocolate chips.
- Dump the mixture into the prepared pan and press into place with clean moist hands or a rubber spatula (affiliate link) coated with cooking spray. Cool completely and then cut into 20 bars. Store these easy no bake cookies in a covered container between layers of wax paper.
